Celebration Cake

Four Layer White Cake and Buttercream 

So maybe there wasn't really anything to celebrate, but this cake is worth a celebration on its own. This was my first true attempt at a multiple layer cake (usually I stick with cupcakes). The results were better than I ever imagined! It was simple, just buttercream and white cake, but it tasted smooth and delectable. I loved this cake recipe, it was simple and not too fussy when I increased it to enough for four 8" layers. Next birthday, party, or celebration, I'm making a cake like this one. I'm so excited for my next cake, using this recipe I'm going to try something like this ómbre cake by dying  the layers.    



White Cake 
Makes four 8" round pans

4 3/4 cups cake flour
6 teaspoons baking powder
1/2 teaspoon salt
1 1/2 cups unsalted butter
3 cups granulated sugar
1 1/2 cup milk
 1 teaspoon vanilla extract
11 egg whites

Sift flour with baking powder and salt and set a side. Beat butter in a large mixing bowl so its smooth. Add granulated sugar and continue to mix until it's very light. Alternate adding milk and flour mixture to butter mixture, keeping mixture smooth. Once all is incorporated add vanilla. Whip egg whites, they should be stiff but not dry. Fold eggs into cake batter a little at a time. Grease cake pans and bake for about 25 minutes at 375˚.
